We gather on the Thursday of Holy Week to remember and celebrate the institution of the Eucharist, when Jesus broke bread with his disciples and said, "Take. Eat. This is my body..."
According to the Gospel of John, the last supper was when Jesus washed his disciples' feet and taught them to do likewise. So we observe a foot washing service, which is open to any and all who wish to come forward. The service "ends" with the stripping of the altar.
Maundy Thursday marks the beginning of the "triduum" (the three days before Easter Sunday in which we recall the betrayal, arrest, trial, death, and burial of Jesus) and are widely observed as the holiest and most somber days of the Christian year.
